There are 2 main types of persimmons -- Oriental or Japanese Persimmon Trees and American Persimmon Trees, also known botanically as Diospyros kaki and Diospyros virginiana, respectively. The American variety is of course native to the United States and grows much taller than its Japanese cousins.
All varieties of persimmons are divided into two groups: astringent and non-astringent. The astringent persimmon varieties, like the Hachiya Persimmon, are high in tannins and need to ripen off the tree to become soft and super sweet. Non-astringent persimmon varieties, like the Fuyu Persimmon, stay firm and crisp like an apple. They can ripen on the tree and taste juicy and sweet.
A favorite amongst the American Persimmon varieties is the Deer Candy Persimmon due to its wildlife attracting qualities.
Grafted persimmon trees are ideal for most growers because they produce fruit much sooner. The fruit is superior and true to name on grafted fruit trees. Persimmons grown from cuttings or seeds may not bear the same fruit as the parent tree. It takes baby persimmon trees much longer to grow and produce.

Where to Plant Persimmon Trees
Persimmon trees prefer to be planted in full sun. Be sure to plant your persimmon trees in well draining soil. Some Persimmon trees are more cold hardy and grow in USDA plant hardiness zones 4 through 9, depending on the variety.
